Vineyards: From selected vineyards located in Uco Valley at 1,050 meters above sea level.
Process: Hand harvesting . Bunch selection . Destemming . Berry selection . Fermentation with wild yeasts and maceration in small concrete vats, during a minimum of 25 days at 25 27ºC. Natural malolactic fermentation . Aged for 18 months in French oak barrels. Bottling ageing during 6 months.
Food Pairing: Ideal to combine with traditional Argentinian dishes based on red meats and also
with hard cheeses
