Legaris Crianza is our winery’s most representative wine. It shows that a perfect balance between uniqueness and complexity is possible in Ribera del Duero. To achieve this, in this 2019 vintage, we start from 9
different geographical areas whose grapes we vinify separately. Our goal in Legaris Crianza is to achieve a balance between the fruit from the terroir and the oak, and we have gradually achieved this with successive vintages by reducing the weight of barrel aging in the final wine.
Winemaking:
The grapes were quickly taken to the winery to ensure their traits are preserved. After destemming, the grapes arrived practically whole in the stainless steel tanks. They were vinified separately according to provenance.
We subject the grapes to a cold soak at 10 °C (50 °F) for 1-2 days, in order to extract aromas and colour, and then allow the temperature to gradually rise. Alcoholic fermentation was allowed to start spontaneously
and the grapes’ own wild yeasts were allowed to express the typicity of the different terroirs.
Fermentation temperatures are in the range of 26-28 °C (79-82 °F). The wine was devatted 14-16 days on average after vatting.
