Legaris Roble is a wine with an extremely intense aroma that aims to extol all the potential of the Tinto Fino (Tempranillo) varietal. This wine is made from grapes grown in the winery’s own vineyard that are specially selected to create this style of wine.
Winemaking:
The harvest started in Legaris on the 25th September with old bush vines in Peñaranda de Duero (Burgos), and continued without incident until our Cabernet Sauvignon was picked in San Martín de Rubiales on the 16th of October.
The grapes were de-stalked and moved to the tanks without crushing. After 48 hours of cold maceration,
alcoholic fermentation took place at 25ºC to preserve the varietal aromas. In total, the maceration period was 10- 12 days. The wine then underwent spontaneous malolactic fermentation in stainless steel vats. Once
completed, it was transferred into American oak barrels, where it underwent three months’ ageing in American oak barrels.
The wine was finished with light clarification and a final filtration to fine the wine before bottling.
