Raimat Garnatxa Negra Boira, is made employing organic methods from the vine to the glass. It is certified by the Catalan Council of Organic
Production (CCPAE).
Winemaking:
The grapes come from own organic vineyards where we don’t use herbicides on the ground cover nor do
we use mechanical actions that churn the soil. The yields are low and the plant treatments are less aggressive,
although they do require more frequent monitoring. After harvesting, the grapes were moved quickly to the
winery and underwent cold maceration at a temperature of around 15ºC to maximise fruit extraction. The
garnacha fermented at a controlled temperature of 25-28ºC in stainless steel tanks to favour the fruit
expression, freshness and elegance of this variety; a small part was vinified at a higher temperature to give good tannins, colour and aromas to the final b l e n d . Once alcoholic fermentation was completed, the wine was racked to other tanks to undergo malolactic fermentation. The whole winemaking process of this wine followed organic production principles.
