Tasting Notes:
Appearance: Bright, very intense deep cherry red, with purple highlights that denote its youth.

Nose: Fruit and aniseed notes stand out at the start, with a predominance of ripe black fruit (blackberries and blueberries) intertwined with violets and a mentholated background with touches of bay leaf.

Palate: It is juicy and easy-to-drink, with very smooth tannins. The intense notes of black fruit resurface with subtle hints of cocoa over a resinous backdrop. Liquorice and touches of aniseed appear on the finish.

Food Pairing:
Ideal with raw meat such as steak tartare, cured meats such as serrano ham, cecina, longaniza and fuet.

Discover in this bottle the purpose of our existence, which is none other than to share with you all our knowledge and help you discover more about wine and its pleasures. Raimat Garnatxa Negra Boira, is made employing organic methods from the vine to the glass. It is certified by the Catalan Council of Organic
Production (CCPAE).

Winemaking:
The grapes come from own organic vineyards where we don’t use herbicides on the ground cover nor do
we use mechanical actions that churn the soil. The yields are low and the plant treatments are less aggressive,
although they do require more frequent monitoring. After harvesting, the grapes were moved quickly to the
winery and underwent cold maceration at a temperature of around 15ºC to maximise fruit extraction. The
garnacha fermented at a controlled temperature of 25-28ºC in stainless steel tanks to favour the fruit
expression, freshness and elegance of this variety; a small part was vinified at a higher temperature to give good tannins, colour and aromas to the final b l e n d . Once alcoholic fermentation was completed, the wine was racked to other tanks to undergo malolactic fermentation. The whole winemaking process of this wine followed organic production principles.
